Not a real recipe...but here's what I put in:<br /><br />* 2 cups diced leftover chicken meat<br />* 1 stalk of celery, thinly sliced<br />* 1 chopped boiled egg<br />* 1/3 cup finely diced onion (sweet yellow or the purple kind...but shallots work great too!)<br />* Enough light mayo to bind it together<br />* A few dashes of Tony's or other Creole seasoning<br />** NOTE: Sometimes I put in some finely chopped pecans, but not always. Michael also likes me to put in some halved grapes if I have them on hand.
